Abstract

Model system studies were conducted to assess effect of aw, pH, sodium benzoate, potassium sorbate or combinations of these factors on growth of Zygosaccharomyces bailii and Z. rouxii. Interaction of antimicrobial action of these factors was assessed statistically; results showed that, using various combinations of the parameters studied, growth of these 2 Zygosaccharomyces spp.could be controlled. Tests were also conducted with Z bailii in banana pulp samples with aw 0.95-0.96, pH 3.5-4.0 and benzoate concn. 800-1000 ppm. Results showed that, under these conditions, Z. bailii was incapable of growth in banana pulp after storage for 7days at ambient temp.
