Abstract

The brewing process can be analysed by considering each stage as a complex of unit operations. By considering the physical parameters involved in each unit operation the effects of changing the traditional process can be assessed. If the design of the brewing process is based on sound process engineering principles the overall efficiency of the process should be improved without having to sacrifice product quality. 1966 The Institute of Brewing & Distilling
