Abstract
Abstract. Konjac glucomannan (KGM), a natural polymer derived from konjac, is noted for its unique physicochemical properties and its extensive application across various fields. In recent years, the rising demand for healthy diets and functional foods has highlighted KGMs positive effects on blood sugar control, weight loss, and immune regulation, making it a focal point in food science research. This paper aims to deeply explore the physicochemical properties of KGM through detailed analysis. In the study of preparation methods, multiple techniques for preparing KGM were investigated, and the impact of different preparation methods on the properties of the product was discussed. In terms of health effects, relevant studies and experiments have demonstrated KGMs beneficial roles in blood sugar control, gut health, and immune modulation. Summarizing the findings of this research and looking towards the future, it is concluded that KGM has broad application prospects, providing scientific evidence for the continued development of konjac products.
