La importancia de la gestión ambiental en la competitividad de las Pymes de la industria Restaurantera: Caso Hidalgo, México

Abstract

The Food Service industry is one of the most polluting as the production and waste of food generate greenhouse gases with environmental and economic impacts. Through the Competitiveness Map of the Inter-American Development Bank, this paper identifies the impact of Environmental Management on the competitiveness of 111 companies dedicated to the preparation of food and beverages located in the state of Hidalgo, Mexico. The empirical results show that environmental management significantly impacts the sector's competitiveness. However, despite knowing the current environmental regulations, companies do not incorporate environmental aspects into their strategy.
