Abstract

Amaranth (Amaranthus hypochondriacus L.) and chia (Salvia hispanica) are endemic seeds of Mexico and are consumed traditionally since thousands of years ago. Their health benefits are known from ancestral medicine knowledge, but only recent scientific research has demonstrated specific aspects of their chemical composition and relates it to health benefits. This chapter provides information related to bioactive components of amaranth and chia seeds which can be considered as nutraceuticals, remarking the importance of its consumption.
