Abstract

This study investigates consumer perceptions of foods fortified with omega-3-rich oils and proteins from fish processing side streams. Using a survey and seven focus groups, the study finds that consumer attitudes towards functional foods and omega-3 are generally positive, though many are unsure that they get enough omega-3 from seafood alone. There is market potential for such fortified foods, as many respondents were willing to try them and recognized their health and sustainability benefits. However, they emphasized that taste, texture, and price must match conventional products for acceptance.
