Abstract

The purpose of this chapter is to provide a review of demand and market integration studies with respect to fish and seafood products, focusing on methods used, on information that is obtained and on how this information varies with the approach used. Within the general demand structure for fish, we review the Rotterdam system and the almost ideal demand system as well as single equation specifications. Market integration studies have become an increasingly common approach to obtain information about the demand structure when the data availability is limited. We also provide a general assessment of the demand elasticities for fish and seafood products.
