Abstract

Introduction: Paraná is the second largest Japanese community in the country. Considering that the kitchen reflects the culture and reflects the civilization of a people, and the change in the food model has been reported in several populations, this study aimed to identify the food and anthropometric profile of a group of nipodeans. Methods: A cross-sectional, analytical study with adult nipodaans residing in Curitiba, PR. The sample was obtained for convenience. Food consumption was assessed by qualitative quantitative food consumption questionnaire. Energy, macronutrients, omega-3 and sodium contents were quantified per food composition table. The anthropometric evaluation was performed through abdominal circumference (AC) and body mass index (BMI). Results: A total of 105 individuals with mean age of 44.3 ± 21.0 years participated. The mean energy consumption was 2597.2 ± 593.8 kcal, 58.4 ± 15.5% carbohydrate, 16.8 ± 4.3% protein, 24.8 ± 6.7% total lipids, 11.0 ± 1.9% saturated fats, 8.7 ± 2.0% monounsaturated fat, 6.2 ± 1.5% polyunsaturated fat, 303.8 ± 53.1 mg cholesterol, 5 ± 0.4g of omega-3, 18.6 ± 13.3g of sodium and 32.8 ± 4.6g of fibers. High consumption of ultraprocessed foods was found, highlighting soft drinks and shoyo. According to the BMI, 8% of the evaluated ones presented thinness, 55% eutrophy, 29% overweight and 13% obesity. Regarding the risk of metabolic diseases associated with obesity, evaluated by the AC, 51% of the women and 56% of the men presented a risk. Conclusion: The nipodescentes evaluated presented energy, glucose, saturated fat and high sodium consumption, which may be associated with overweight, obesity and risk of metabolic diseases associated with obesity, found in this population.
