Abstract

© 2016, Malaysian Society of Analytical Sciences. All rights reserved. Enzymatic glycerolysis using Candida antarctica lipase b (CALB) as catalyst was studied. Production of monolaurin was optimized based on two selected types of CALB, varying enzyme concentrations and reaction time. Novozyme-435 (N-435) and Aspergillus oryzae were used in this study. About 47.6% of monolaurin was synthesized using N-435 at a 5% enzyme concentration within 24 hours of reaction time. Characterizations were performed using different techniques namely gas chromatography-flame ionization detector (GC-FID), thin layer chromatography (TLC) and Fourier transform infrared spectroscopy (FTIR) analysis.
