Abstract

The ice growth inhibitory mechanism of antifreeze glycopeptides is analyzed. According to the kinetic theory of the thermal hysteresis of a macromolecule solution, we have deduced the relationship between the molecular weight of the ice growth inhibitor and thermal hysteresis (the difference between ice crystals growing points and melting point). The result is consistent with experimental data. © 1994.
