Grew up raising cattle that were "good" but didn't really understand why, so I started my collegiate career (like many others) aspiring to be a large animal veterinarian. In my Sophomore year, I did a 180 and developed an interest in the meat we eat, and have been actively involved in the meat industry ever since. After 8 years in the central U.S., I was transplanted to Pennsylvania where I now work largely in Extension -- helping meat processors and livestock producers in this state (and upward through New England) produce higher quality (within the many interpretations of "quality") meat while staying within regulatory bounds. My specific research interests include: why meat is the color it is, improving shelf life via novel packaging, and factors that are associated with an already strong regional meat production system. I am also a self-proclaimed "gadget geek," doing my best to link science communication to the masses via technologies such as blogging and other social media. I also enjoy traveling and playing with my camera's settings.
