We are finalizing the production of sugars from sago starch, utilizing the enzymatic process, at a 100% recovery in about 6-8 hours. Sago starch produces brown (raw) sugar, which has been shown to contain flavonoids and we have identified 4 of them. Purification of brown sago sugar into white sugar left with only type of flavonoid at a very much lesser concentration. Sago sugar contains 95% glucose, is half as sweet as sucrose. Hope to produce this at larger scale (300-500L) in a couple of months time.
