This study aimed to describe the characteristics of biomedical enzymes amylase and its utilization in the industry. To achieve the research objectives has conduct the observations and interviews to the public. The study population was all over the city of Medan in the category of the sample. Samples of this study is the distribution of the age of 14 years and above, at least complete primary school education level. The research instruments were questionnaries and talk list. Data were analyzed by descriptively. The results showed that the public was aware of enzymes in general, but knowledge about the specific enzyme activity and inadequate reaction as well as the role of enzymes in the manufacture of food products. Similarly, the role of the enzyme amylase in bread making, generally public knowledge are also not adequate, although bread is a food product which in most cases have often consumed. Kata
