Abstract

A review. The general classes of dietary antioxidants found in natural products that can serve as alternative sources of natural antioxidants (NAO), such as oilseeds, nuts, cereals, legumes, animal products and microbial products, are discussed. The structural components of the active antioxidants, concns. of NAO in specific natural products, and factors affecting their antioxidant activity are described.
