The applications of capillary electrophoresis (CE) in food analysis from 2000 to 2004 were reviewed with 59 references, including the CE analysis methods of proteins, amino acids, biogenic amines, vitamins, carbohydrates, inorganic ions, organic acids, food additives, residuals of pesticides and antibiotics, biotoxins and so on in food.
