Abstract

The quantities of free amino acids and soluble peptides in seven whey powders were determined. Free amino acids in four acid whey powders averaged .59% (range .1 to 1.1%) and in three sweet whey powders .34% (range .1 to .64%). Combined free amino acids and soluble peptides averaged 2.96 and 2.27%. The predominating amino acids in the free amino acid pool were glutamic acid, proline, lysine, tyrosine, aspartic acid, and arginine and in the combined free amino acid-soluble peptide pool, glutamic acid, proline, threonine, aspartic acid, lysine, and serine. © 1973, American Dairy Science Association.
