Abstract

Cassava (Manihot esculenta Crantz) is a semi-perennial root crop that is widely grown throughout the tropics and is used either as a staple food crop, or for the production of starch and its derivatives. Sub-Saharan Africa produces more than half of the world's cassava crop. In fact, the total fresh production of more than 100 million tons (FAO 2009) of cassava is greater than that of any other crop. © Springer Science+Business Media B.V. 2010.
