Abstract

Urbanisation causes functional and spatial changes in the areas around cities, also called metropolitan areas. There are several reasons why eating establishments appear in suburban areas: (1) they are situated in settlements that have been independent towns or larger villages, (2) bars or restaurants appear in new settlements whose emergence is closely related to the process of suburbanisation, (3) dining outlets appear along the most important roads and at intersections, (4) shopping centres, logistic centres, office parks, etc. in the suburban area are often accompanied by bars and cafeterias and (5) suburbs with a developed leisure function, restaurants, bars and cafés appear in places intended for outdoor recreation. This chapter draws upon the example of the district of Piaseczno (south of Warsaw), which consists of six municipalities. Three of them directly adjoin Warsaw and are parts of its suburbs, while the three others are largely rural, although they now include many new housing estates. It is reflected in the distribution of eating establishments.
