Abstract

The carbohydrase β-galactosidase is reviewed. A brief discussion of enzyme sources, isolation, purification, and assay techniques is presented. Potential commercial applications of lactose hydrolyzed products are described. Various immobilized lactase systems are described in chronological order, and recent applications are discussed. Because of the increased interest in this research, some nutritional concerns are discussed also. © 1981, American Dairy Science Association. All rights reserved.
