Abstract

Compositional characteristics of seven lines of tomatoes have been determined. The following parameters were evaluated: dry matter, acidity (citric acid equivalent), Ca-pectate, ash, cellulose, sugars (total, reducing sugars, sucrose), mineral substances (N, P, K, Ca, Na), surface color and carotenoid content. From a compositional viewpoint, there were no significant differences between lines, but in cellulose, sucrose, mineral substances, carotenoid content, and surface colour parameters, a*, b*, L and h?. .U ovom radu razmatrane su razlike crvene, zute i zuto-zelene linije paradajza u pogledu hemijskog sastava (suva materija, kiselost, Sa-pektat, pepeo, celuloza, seceri), mineralnog sastava (azot, fosfor, kalijum, kalcijum, natrijum), profila karotenoida i parametara povrsinske boje (a*, b*, L, h?). Bitne razlike uocene su u sadrzaju celuloze, saharoze i mineralnih materija. ?-karoten je bio zastupljen u crvenoj liniji Novosadski jabucar, dok je ?-karoten bio zastupljen kod ostalih uzoraka. .
