Abstract

Black glutinous rice flour is a flour made from black glutinous rice which can be used to reduce dependence on imported wheat flour. The effect of moderate gamma irradiation with 60 Co radiation source and storage for one month on the quality of its physico-chemical properties has been investigated. Black glutinous rice flour without irradiation, irradiated at a dose of 5 kGy, and 7 kGy packed with LDPE packaging material. The research data were analyzed using a factorial completely randomized statistical test. With a storage time of 0 days and 30 days. Based on the results of the study, there was no effect of irradiation dose, storage time and interaction between irradiation dose and storage on organoleptic parameters, moisture content, ash content, water activity and whiteness, and had an effect on parameters of pH, viscosity, and starch content on the quality of flour. black sticky rice.
