Abstract

In the first pages of this book, we have identified three drivers for change in hospitality education:1.The evolution of the hospitality industry, in the context of disruptive technological change and globalization2.The insertion of hotel schools, which often have evolved from vocational schools with a practical preparation for working in the industry into higher education systems3.Educational innovation in general.The chapters of this book propose different answers to these changes, broadening the educational perspective of hotel schools and reconsidering the relations between theoretical and practical education.
