Abstract

In contemporary gastronomy, there are several trends that can be considered as challenges for the current model of restaurant business operation. This short section is an introduction to the part of the book paying attention to this problem. Examples of the challenges include: (1) the development of eating services in shopping centres, (2) the growing role of street food, (3) the emergence of a dining function in new public spaces (parks, riverside areas) and (4) the increasing of the popularity of delivering meals to the home (which is greatly influenced by new technologies in the IT sector).
