Abstract

The global phenomenon of organic food and farming, \rafter three decades of progress, faces new challeng\res\ras markets mature and the impacts of the global rec\ression start to change consumers and farmers'\rexpectations. This global survey of the organic foo\rd and farming considers how the social sciences hav\re come\rto understand in what way consumers make their choi\rces as they shop, and how new national markets evol\rve.\rIt also surveys how established organic sectors in \rNorth America and Europe are changing in response t\ro the\rchanges, that in part, the organic movement has cre\rated.
