Abstract

Drying is one of the stages of coffee processing and has been considered one of the factors that impact the quality of the final drink. In this sense, the present study developed a phenomenological model for a box-type dryer implementing in C/C ++ programming language. The profile of the exhaust air temperature was obtained over the drying time. The model was verified by comparing data obtained from the literature, thus guaranteeing its functionality to make predictions about the air temperature profile in equipment used by small coffee producers, which may contribute to the increase in product quality.
