Abstract

Cohumulone occurs in considerable quantity in some hop varieties. The information at present available concerning this substance is reviewed and it is shown that it is a lower homologue of humulone having the formula C20HO5, having an isobutyryl side‐chain in place of the isovaleryl side‐chain of humulone. The contribution of cohumulone to the bittering of beer is discussed. 1954 The Institute of Brewing & Distilling
