Abstract

The chapter discusses the issues of food safety and bioterrorism from the position of public health. The author gives the overview of the problem focusing on agricultural sector as a particularly vulnerable element in the farm-to-table food continuum, describes the possible scenarios of bioterroristic attacks and the necessary preventive activities to provide food safety. The article also contains the results of the original study conducted in two Russian regions on the perception of risk related to food safety by consumers. © 2011 Springer Science+Business Media B.V.
