Abstract

γ-polyglutamic acid (γ-PGA) is a kind of biopolymer with high accessional value, and yeast extract is a crucial raw material for the fermentation of γ-PGA. In this paper, the extraction of yeast extract form the waste beer yeast was optimized. Result showed that, 24-h autolysis at 55 °C with 2% NaCl, 2‰ dextranase and 3‰ complex protease addition, the yield of yeast extract was reached 48.64% (w/w). Then the yeast extract was used in γ-PGA fermentation, and the corresponding γ-PGA yield reached 18.69 g/L with 7.5% yeast extract addition, increased by 290% than that of without yeast extract addition.
