Abstract

Cajamarca, the capital city of Cajamarca province, lies approximately 2,720 m above sea level, and has a population of about 165,000 people. Two of the country's largest dairy factories, Nestle and Leche Gloria, are located just outside the city. The region is a cattle breeding area, and produces cheese and other dairy products. Many families also breed guinea pigs. Agricultural products include potatoes, wheat, maize, barley, rice and sugarcane (Gobierno Regional de Cajamarca 2003). © 2011 Springer Science+Business Media B.V.
