Standard recipe practice is believed to be crucial for keeping up the quality from preparation to presentation of traditional cuisine and its sustainability in many ways. Since high employee turnover rate poses a big risk in small scale traditional food businesses, standard recipes make it possible to provide the same quality food and presentation in the event of change in kitchen personnel.
