Abstract

Anthocyanins (ACNs) have a widespread spectrum of biological activities, such as antioxidant, anti-inflammatory, or chemopreventive features, which support human health, although their low bioavailability and extensive biotransformation interfere with these advantages. This chapter underlines the various ACN bioactivities, their bioavailability and stability, as well as the recent nanoencapsulation processes that have improved the ACN effects against different disorders.
