Cereal lipids are broadly classified according to the grain tissues (germ, aleurone, endosperm) from which they are extracted and, like proteins, their extraction behaviour in solvents. For example, endosperm glycolipids can be extracted from outside (“non-starch” glycolipids) or inside (“starch” glycolipids) the starch granules (Chung 1986).
