Abstract

This chapter consists of a general review of the electrochemistry of oil-water interfaces. Topics discussed include: the potential difference at oil-water interfaces; electrocapillarity; binding at oil-water interfaces; electrocapillary emulsification; coalescence of droplets; and potential distribution of membrane systems.
