Abstract

A technical report presents detailed information and copious data concerning agricultural effects and the effects of handling, processing, and storage conditions on the nutritive value and food composition of red meat. Topics include: world meat consumption patterns; nutrients in meat products; the effects of genetics, age, season, sex, type, and grade of cattle, sheep, and hogs on meat quality; the nutritional value of animal feeds; the effects of specific meat processing and storage conditions; and health risks posed by meat processing and by meat contaminants. Extensive meat composition tables (including infant foods containing meat) are included
