Growth temperature ranges, generation times, and thermal resistance data were determined for four lactobacilli isolated from cultures used in manufacturing nonfermented acidopbilus milks. One isolate was Lactobacillus acidophilus, judged by physiological characteristics and a guanine plus cytosine content of 36.8 mole %. Another resembled Lactobacillus acidophilus in physiological characteristics but had high guanine plus cytosine content (52.6 mol %). Two others apparently were Lactobacillus lactis. © 1982, American Dairy Science Association. All rights reserved.
