Abstract

The PDO Mont Saint-Michel Bay Bouchot mussels was created in 2011, in order to secure the market for a recognized quality product and reinforce governance of the production system, in relation with natural resources management issues. Sustainability assessment conducted in the framework of the Strength to food project, shows the supply chain performing well in social and economic areas. The assessment of environmental impacts, highlighting the low carbon footprint of mussel production compared to terrestrial breeding systems, requires closer investigation on water footprint, with the use of indicators better adapted to the specificities of shellfish production.
