This review surveys some of the areas in which nutrients have been shownto have an impact on specific immune functions, the use of molecular and genetic tools to study molecular responses to dietary factors, and the metabolic consequences of food. It also explores the relationships between nutrient molecules, genetic polymorphisms, and the biological system as a whole, while providing a short introduction to nutrition immunology, nutrient-gene interactions and the novel technologies employed in nutrigenomics and nutrigenetics research. © 2009 International Life Sciences Institute.
