Abstract

Food safety issue has attracted more and more attention from consumers. Traceability systems can play an important role in food quality control. Implementing end-to-end traceability along food supply chain is quite a challenge. The paper aims to analyze how food practitioners establish the traceability systems in order to ensure food safety. This study analyzes the risk of quality in food supply chain, and identifies three key dimensions for the establishment and operation of traceability systems: standard system, technology system, management system.
