Abstract

Abstrak. Buah nanas (Ananas Comosus) merupakan salah satu buah yang banyak digemari oleh masyarakat Indonesia, memiliki nilai gizi yang tinggi, kaya akan vitamin A, B, C, dan mineral (kalsium, fosfor, dan besi), dan mengandung senyawa yang berpotensi sebagai antioksidan (polifenol dan flavonoid). Masalah yang sering timbul pada buah nanas yaitu mempertahankan mutu dan kualitas. Hal tersebut dapat dipertahankan jika dilakukan penanganan pasca panen yang stepat salah satunya penyimpanan suhu rendah. Tujuan penelitian ini yaitu merancang mesin cold storage sistem pendinginan kompresi uap dengan suhu yang harus dicapai yaitu 7°C, menghitung lama pencapaian suhu 7°C, beban pendinginan bahan, dan COP mesin. Penelitian ini dilakukan berdasarkan 3 tahapan, pertama menggambar rancangan cold storage dengan software AutoCad. Kedua pemasangan alat dan bahan sesuai dengan gambar rancangan. Ketiga pengujian mesin cold storage dengan suhu yang harus tercapai yaitu 7°C dan pengambilan data dengan menggunakan bahan nanas sebanyak 4 buah dengan berat total 5,58 kg serta dihitung parameter penelitian seperti lama pencapaian suhu 7°C, beban pendinginan bahan, dan COP mesin. Hasil dari penelitian ini menunjukkan bahwa lama waktu pencapaian suhu 7°C dari pengujian bahan dengan suhu awal 30°C dan suhu akhir 7°C yaitu 16.883 detik (4 jam 41 menit 23 detik). Beban pendinginan bahan dengan berat total nanas utuh sebesar 5,58 kg dan cp buah nanas 3,68 kJ/kg°C yaitu 472,19 kJ. COP mesin cold Storage dari penelitian ini adalah 2,45, jika nilai pada mesin cold storage semakin besar maka semakin efisien hasil kerja mesin tersebut, mesin cold storage dalam penelitian ini termasuk kedalam mesin pendinginan lambat.Design Cold Storage Machine Based on Steam Compressed Cooling System For Pineapple Fruit Storage (Annanas comosus)Abstrack. Pineapple fruit (Ananas Comosus) is one of the most popular fruits of Indonesian society, has high nutritional value, is rich in vitamins A, B, C, and minerals (calcium, phosphorus and iron), and contains potentially antioxidant compounds (polyphenols and flavonoids). Problems often arise in the pineapple is to maintain grade and quality. This can be maintained if post-harvest handling is correctly treated, one of which is cold storage. The purpose of this research is to design cold storage engine of vapor compression cooling system with temperature that must be reached that is 7 ° C, to calculate the duration of temperature 7 ° C, material cooling load, and COP of machine. The research was conducted based on 3 stages, first drawing cold storage design by using AutoCad software. The second one is to install the tools and materials in accordance with the design drawings. The third is to test the cold storage machine with temperature that must be reached is 7 ° C and data retrieval using pineapple as much as 4 pieces with total weight 5,58 kg and calculated research parameters such as temperature 7 ° C, material cooling, and COP machine . The results of this study indicate that the duration of temperature 7 ° C from material testing with the initial temperature of 30 ° C and the final temperature of 7 ° C is 16,883 seconds (4 hours 41 minutes 23 seconds). The cooling load of the material with the total weight of whole pineapple is 5.58 kg and cp pineapple 3.68 kJ / kg ° C is 472.19 kJ. COP cold storage engine of this research is 2.45, if the value of the cold storage machine is greater then the more efficient the work of the machine, cold storage engine in this study included into the slow rate cooling machine.
