Abstract

The food supply chain is a very demanding and dynamic sector of economy. The goods that flow through the supply chain are exposed to damage. The authors have developed a model which optimizes the cost of transport in the network. It is based on graph theory, and, in particular, the Generalized Flow Problem has been used. The main contribution of this paper is the implementation of this model in a simulation environment. It has allowed to research how defect ratios influence the structure of an optimal configuration of a supply chain. © 2012 Springer-Verlag.
