PERUBAHAN KARAKTERISTIK FISIKOKIMIA MINYAK SELAMA PENGGORENGAN DENGAN METODE DEEP FAT FRYING: KAJIAN LITERATUR

Abstract

Gotu kola (Centella asiatica (L.) Urb) is one of the most desirable medicinal plants in the Indonesian market. Higher demand of raw materials, causing greater need of the human resources. Human resources implied to the simplicia prosessing workers qualities and quantities. The wet sorting process is the beginning of the post-harvest process which largely establish the quality of medicinal ingredients. This study aims to determine the effect of labor's internal factors on the speed and accuracy of the wet sorting of gotu kola plants. In this study the workers' internal factors were collected, including age, sex, education level, wet sorting experience time, and area of the right hand. Workers perform gotu kola wet sorting and analyzed in terms of speed and accuracy. The results showed the area of the right hand of the workforce had a positive and significant effect on work speed. Gender gives a significantly different effect on work speed. Labor's internal factors used in the observation did not have a significant effect on the accuracy of the wet sorting of gotu kola plants. ©
