Abstract

Outcomes of survey studies on food safety practices in farmers markets and outbreaks of foodborne illnesses associated with farm stands and farmers mar- kets illustrate the need for a better understanding of actual food handling behaviors in these environments. Observational studies have identified actual practices that may increase a consumer’s risk for foodborne illness and are consistent with risk factors for foodborne illness as identified by the Centers for Disease Control and Prevention. In order to mitigate risks in farmers market environments, vendors and managers must first recognize that regardless of the size of a business, foodborne illness can result if risky food handling practices are used. They must be able to identify risky practices and strategies for controlling hazards. Practice assessment tools developed as a result of survey studies for use as self-inspections of farms and markets and tools developed for use in gathering data in observational studies in farmers markets may be useful in helping vendors and market managers identify food safety hazards and develop and implement risk mitigation strategies to enhance safety of products sold in farmers markets
