In order to study the relationships between pork quality and the BIS of porcine tissues, a novel four-annulus integrated disk (FAID) electrode was designed and manufactured. The contrastive measurement experiments on two fresh isolated animal tissues, namely porcine underback and porcine liver using the FAID electrode were performed. The results show that the impedance amplitude-frequency characteristics and phase-frequency characteristics of the two kinds of tissues have significant differences. The Cole-Cole parameters fitting are then performed using the measured BIS data. The fitting results show that the arrangement of the BIS data on the complex plane is in good concordance with the Cole-Cole plot respectively, and the extracted results, R0, R∞, α and fC, also indicate the difference between the two tissues. © 2013 Springer-Verlag.
