A methodology to conduct microbial assessment studies in food processing plants was designed. This consists of a series of steps each with its own objective and procedure. The methodology consists of the following six steps: definition of the general objective, visit to the plant, design of a sampling protocol, choosing microbial methods to be deployed, data collection, and analysis and utilization of results and conclusions. Application of this methodology allows reaching a series of important conclusions regarding microbial evidence. These conclusions are useful as a basis to design HACCP plans, as they provide specific information about the processing environment. (English) [ABSTRACT FROM AUTHOR]
