Abstract

Horchata is a typical Spanish sweet vegetable drink made from tigernuts. It was traditionally prepared daily and consumed in ice-cream shops. In the last decades, it is being produced industrially by means of different processes to be sold in supermarkets. Due to the high starch content of tigernuts, industrial processing has been adapted to obtain a characteristic and rich liquid product with the traditional standards, which is not easy to accomplish.
