Abstract

The use of protein hydrolysates as an important nutrient for growth and maintenance has been increasing in animal nutrition. Although animal proteins and protein hydrolysates are widely used however, recently vegetable protein hydrolysates are gaining importance. This chapter reviews the use of protein hydrolysates developed by enzyme hydrolysis and by solid state fermentation process in animal nutrition especially for piglets and compares it with the standard products such as plasma and fishmeal. © 2010 Springer Science+Business Media B.V.
