Abstract

Cold preservation including freezing and refrigeration is the ancient technique of food preservation. In 1875, a mechanical refrigeration system based on ammonia was invented and it was capable of supporting a commercial refrigeration system. This major invention was hindered by the deficiency of decent facilities required for any frozen or refrigeration food industry. In the 1920s, Clarence Birdseye further worked on freezing processes, frozen products, equipment, and packaging for frozen foods. Now, with an abundance of household freezers and refrigerators, the modern frozen food industry is growing rapidly.
