Abstract

The Minangkabau people believe that ABS-SBK is a philosophy of life, which has been implemented in all segments of life, including food. One form of belief that Minang cuisine contains ABS-SBK philosophical values is the belief of the Minangkabau people that wherever a Minang restaurant is located, it is guaranteed to be halal even though there is no halal certificate or logo. The aim of this research is to describe the extent to which halâlan tayyib is implemented in the typical culinary delights of the Minangkabau tribe. This research is field research using a qualitative approach with analytical descriptive methods. The results of this research show that there is visible practice or implementation of the halâlan tayyiban concept in the processing of typical Minangkabau culinary delights which are classified into nine Surgarini gastronomic concepts.
