Kitchen environment is quite different from the environment of other public and private spaces. Kitchen ventilation is a complex combination of processes and technologies which requires an in-depth understanding of numerous cooking processes, climatic conditions, building construction methods, thermodynamics, and fluid mechanics. This chapter covers the history of cooking as well as the most recent development in research and its corresponding applications in Asia and Europe.
