Abstract

Pectins, are plant cell wall polysaccharides which have not a clear-cut definition. These polymers are studied by biochemists, biologists, pathologists, physlcochemists and technologists with different aims or m and hods which have some common difficulties. These problems arose (1) from the facts that pectins bear electric charges which have a profound influence on the solubility, chemical degradations, chromatographies, behaviour in solution…(2) the composition and the structure of the pectins is complicated by the h and eropolymerlc nature of these substances and (3) an extraction is necessary prior their study and this step must avoid artefacts. © 1991 Taylor & Francis Group, LLC.
